This is a bloom-ripened cheese made from pasteurized ship milk. Shaped in a small cylinder, its yellowish/white crinkly rind had an aroma similar to a Normandy Camembert. Below the tender, thin rind, it’s smooth, creamy, firm body is often edged with a runny cream. The flavour is delicate and fresh in the interior and more cultured and aromatic on the outer edges. This is a sophisticated, rich and sensuous cheese.
