Best Baa Dairy Eweda

This pasteurized sheep milk cheese begins life as a gouda recipe – hence the peculiar name, a combination of the words ewe and gouda.  It’s relationship with gouda cheeses, made with cow’s milk, ends at the recipe stage as the flavours take on the creamy, mildly tart and fruitiness of sheep’s milk. 

It is a yellow waxed cylindrical tome weighting approximately 3.5 kilos.  It is aged for 6 months creating a paste which is firm, white and open. The aroma is lactic, mild with some fruity undertones.  The flavour is tangy and mild with lingering creaminess reminiscent of a manchego.
