Ramembert is our version of Camembert (we just can’t stay away from a good pun… at least we think it’s good!).
This small, bloom ripened cheese is available made from raw or pasteurized milk. The exterior is fluffy and white concealing an ivory white interior. The paste is creamy and smooth with an earthy, mushroomy aroma. The cheese is at its best when the sides yield easily to pressure. Store in the fridge when ripe and serve with a crisp baquette, grapes and any wine paired with camembert.

Pasteurized: available raw or pasteurized
Aged: at least 3 weeks
Appearance: discs approximately 8 cm x 3 cm (pasteurized) or raw milk wheels approximately 22 cm x 6 cm
Ingredients: sheep milk, salt, culture, rennet
Fat content: 25%
Moisture content: 55%
